Barbeque Pulled Chicken
You Need:
1 pre-cooked rotisserie (skin removed & meat removed from bones & shredded)
1 tablespoon canola oil
3 cloves garlic, minced
1 (14-ounce) can tomato sauce
1/4 cup tomato paste
1/2 cup water
1/3 cup apple cider vinegar
1/2 tsp allspice
1 tblspn onion powder
5 tablespoons molasses (if you have no molasses you can use brown sugar to taste- i add it anyways (about 1/3 cup or so)
1/4 teaspoon ground black pepper
2 teaspoons liquid smoke
6 bulkie rolls
Directions:
Heat the oil in a large saute pan over a medium heat. Add the garlic & cook for 1 minute. Add tomato sauce, tomato paste, water, vinegar, molasses, brown sugar, pepper, allspice, onion powder and liquid smoke and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes. Add chopped chicken, return to a simmer, and cook an additional 10 minutes.
split the rolls & pile on the chicken- YUM!!!!
Sour Cream Banana Bread
Ingredients:
5 Tbsp. butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
2 egg whites
1 tsp. vanilla
1 1/2 c. mashed bananas (about 3-4; the blacker = better!)
1 3/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1/2 c. sour cream
1/2 tsp. ground cinnamon
1/8 tsp. nutmeg
2 tblspn. maple syrup
Directions:
Preheat oven to 350. Grease and flour 2 9x5 in loaf pans (i use Baker's Joy spray & it works wonders!)
Cream butter and sugars together with mixer atmedium speed for about 2 minutes to whip the mixture.

While that mixture whips together, combine dry ingredients in a separate bowl.
Lower the mixer to low and add egg, egg whites, and vanilla. Mix to incorporate.
Add dry mixture and sour cream to butter mixture, alternating a small amount of each at a time, starting and ending with the dry mixture. Blend for a minute to whip and incorporate.
Slowly add mashed bananas & maple syrup to the mix and blend quickly to incorporate.
Evenly pour mixture into pre-greased loaf pans. Bake for approximately 1hr at 350 degrees.
roast chicken
i bought a 7lb chicken & decided to make dinner for the IL's- i paired it with mashed potatoes & steamed broccoli/cauliflower- yum!
1 6-7lb chicken
1 lemon
1 bunch thyme
1 bunch sage
6-8 slices smoked bacon
1 stick softened butter
1 head garlic
salt/pepper/extra garlic- seasonings to taste
3/4 cup dry vermouth
pre-heat oven to 450
clean the chicken with cold water & pat dry (remove the inside crap too- gross)
generously salt & pepper the chicken (inside & out)
chop about 1/4- 1/2 the bunches of thyme & sage- mix this (along with some garlic & other seasonings) with the butter to make an herbed butter
usuing your hands, spread the herbed butter all over the chicken- make sure to get this under the skin as well as on it.
cut the lemon in half & stuff it into the chicken along with the peeled garlic head- then shove the rest of the thyme & sage bunch inside as well. (i left out a few pieces & stuck them on the chicken)
pop the chicken into a roasting pan
pour about 1/2 the vermouth into the pan & then inject the chicken all over with the rest (i got my injector at WilliamsSonoma)
lastly- place the bacon over the top of the chicken.
place the chicken (uncovered) in the oven for about 20 min. turn the oven down to 350 & cover the chicken- roast the chicken for an addtl 1 1/2
halfway through, remove the bacon from the top & place around the chicken
about 30 min before the chicken is done- crank the oven back up to 450 and uncover the chicken- this will crisp up the skin- the chicken is done when the internal temp = 170.
let the chicken sit 10-15 min before cutting into it- enjoy!

Potatoes:
3-4 red/yellow potatoes
seasonings to taste
butter
EVVO
basically you need to cut & boil the potatoes until tender- then i line a baking dish with foil & add the EVVO & seasonings. i used galic, thyme, rosemary, pepper, red pepper & etc.
i layer the potatoes with the seasonings/EVVO & butter.
i pop it in the oven at 400 for about 25-30 min (uncovered)- delish!
Turkey:
1-2 large turkey breasts
seasonings
broth
you can throw the turkey in a cr0ck pot or just pop it in a baking dish with chicken broth & salt/pepper at 350 for about 30-45 min (done cooking & tender) then i "shred" it up and walla!

deviled eggs
i love deviled eggs!
Cut eggs in half. Arrange egg whites cut side up on a serving plate and put the yolks in a small mixing bowl. Mash yolks with fork then stir in mayonnaise, mustard, and vinegar. Mash and stir all ingredients together well. Taste and add salt and pepper if desired. Spoon a little bit of the mixture into each egg white half, dividing mixture as evenly as possible between the eggs. Sprinkle eggs with smoked paprika if desired. Serve immediately or refrigerate until ready to serve.
Yield: 12 deviled eggs
