Macaroni & Cheese

macaroni & cheese has many variations- my mac & cheese is usually a throw together of whatever cheeses i have on hand:
this time i had mozzerella, feta & cheddar jack- i usually cook my mac & cheese in the pot & then pop it in the over with some buttered Ritz crumbled on top- but since i was in a hurry i made the simple "one pot mac & cheese"

MACARONI & CHEESE WITH CHICKEN, IN A HURRY:

approx:
1/2 lb pasta
cheese!!! (about 2 cups)
1/2 cup milk or cream
2 tbls butter
2 tbls flour
1 cup cooked & cut up chicken or turkey

cook the pasta & drain- using the same pot, melt the butter on medium heat & whisk in the flour- when the miture is smooth & bubbly, turn the hear up to medium/high & whisk in the milk/cream- let this mixture thicken up (stirring frequently) and when it starts to bubble go ahead & turn the heat on low- stir in your cheeses & let everything melt together. mix in our pasta & chicken, sprinkle on some salt & pepper & walla! super easy mac & cheese!

Enjoy & God Bless!

Lemon Squares

i made Lemon Bars yesterday:

i tested to see which would be better- i made one from a box & then my own...uuuum- we're gonna go with my own :)

Lemon Bars
(makes one 8-inch square pan)

Crust:
1 cup all purpose flour
1/2 cup confectioners' sugar
1/8 tsp salt
4 ounces (1 stick) unsalted butter, cold and cut into 1/2 inch pieces

Filling:
2 large eggs
1 cup superfine or bakers' sugar
2 tbsp all purpose flour
1/8 tsp salt
2 tsp finely grated lemon zest
1/4 cup freshly squeezed lemon juice

Preheat oven to 350°

Butter and line an 8-inch square pan with parchment paper.

To make crust:
Combine flour, confectioners' sugar and salt in the bowl of a food processor. Add butter and pulse until the mixture is pebbly. Press evenly into the bottom of your prepared pan. Bake until lightly golden, about 18-20 minutes.
Set aside crust.

To make filling:
In a medium bowl, whisk together eggs, sugar, flour and salt. Whisk in lemon zest and juice until well combined. Pour over crust (it's okay if crust is still hot). Bake until filling is just set, about 15 to 18 minutes. Cool completely before serving. Dust with confectioners' sugar- Enjoy!

Deep Dish Pizza

Uno's Style Deep Dish Pizza:

i won't lie- this doesn't even compare to UNO'S pizza- the crust isn't as buttery & delicious & the cheese & sauce isn't quite the same, but it's not bad!!

You Will Need:

---CRUST---
1 cup warm tap water
1 tsp active dry yeast
3 1/2 cup flour
1/2 cup coarse ground cornmeal
1 tsp salt
1/4 cup vegetable oil

--FILLING--
1 lb mozzarella, sliced
1 lb sausage, removed from the casing and crumbled
1 can whole tomatos, drained and coarsely crushed
2 garlic cloves, peeled and minced
3 tsp dried oregano,
5 fresh basil leaves minced
4 tb freshly grated parmesan cheese

*i use my mixer & dough hook- but if you don't have one, you can tough it out with your hands*

Pour the warm water into a large mixing bowl and dissolve the yeast with a fork. Add 1 cup of flour, all of the cornmeal, salt, and, and vegetable oil. Mix well with a spoon. Continue stirring in the rest of the flour 1/2 cup at a time, until the dough comes away from the sides of the bowl. Flour your hands and the work surface and kneed the ball of dough until itis no longer sticky. Let the dough rise in an oiled bowl, sealed with plastic wrap, for 45 to 60 minutes in a warm place, until it is doubled in bulk. Punch it down and kneed it briefly. Press it into an oiled 15-inch deep dish pizza pan (or springform pan), until it comes 2 inches up the sides and is even on the bottom of the pan. Let the dough rise 15-20 minutes before filling.

Preheat the oven to 500°

While the dough is rising, prepare the filling. Cook the crumbled sausage until it is no longer pink, drain it of it's excess fat. Drain and chop the tomatos. When the dough has finished its second rising, lay the cheese over the dough shell. Then distribute the sausage and garlic over the cheese. Top with the tomatos. Sprinkle on the seasonings and parmesan cheese.

Bake for 15 minutes at 500° then lower thetemperature to 400° and bake for 25 to 35minutes longer. Lift up a section of the crust from time to time with a spatula to check on its color. The crust will be golden brown when done. Serve immediately.

YUM! PIZZA! God Bless!
