quick sticky buns

These sticky buns are sper quick & super simple!

You Need:
1/4 cup butter
1/4 cup chopped nuts (pecans, walnuts or hazelnuts)
1/4 cup firmly packed brown sugar
2 tablespoons maple syrup
8 ounce can crescent rolls
1 tablespoon sugar
1/2 teaspoon ground cinnamon


Preparation:
Preheat oven to 375 Lightly grease 9-inch round cake pan. Place butter and nuts in pan. Heat in oven for 2 minutes. Remove from oven. Stir in brown sugar and syrup. Spread mixture evenly in bottom of pan.

Remove dough from can, but do not separate or unroll. With a serrated knife, cut into 6 large or 12 small slices.
Combine sugar and cinnamon in shallow-sided bowl. Dip both sides of dough in sugar mixture. Evenly space rolls in pan.
Sprinkle any remaining sugar over top of rolls. Bake for 17 to 20 minutes.
Cool for 1 minute.
Place plate upside down over pan.
Invert pan and plate onto serving platter. Spoon any remaining drippings over

Birthday Cake


Yellow Cake:
Ingredients
Unbleached all-purpose flour, sifted 3 cups
Baking powder 1 tablespoon + 1 teaspoon
Kosher salt 3/4 teaspoon
Milk 1 1/4 cups + 3 tablespoons
Vanilla extract 2 teaspoons
Unsalted butter, slightly softened 1 1/4 cups + 2 tablespoons
Sugar 2 3/4 cups + 2 teaspoons
Eggs 5 large


Preheat the oven to 350ยบ.
Grease the cake pans (2 9in or 1 9x13). Line the bottoms with rounds of baking parchment then dust them lightly with flour. Shake out the excess. Or use Baker’s Joy baking spray that contains both oil and flour, so you don’t have to flour the pan. With Baker’s Joy, put the parchment liner in after you spray the pan.

In a large bowl, sift together the flour, baking powder, and salt. In a separate bowl combine the milk and vanilla.
Cream the butter and sugar on medium speed until it is light and fluffy, 3 to 4 minutes. Add the eggs gradually, mixing well after each addition, scraping the sides and bottom of the bowl often.

Lower the mixing speed to medium-low and add the flour mixture to the butter in 3 parts, alternating with 2 parts of the milk mixture, beginning and ending with the flour. Mix just until it is evenly incorporated. This is a thick, fluffy batter, resembling whipped cream. There should not be any lumps or dry pockets of flour remaining. If the batter has a curdled appearance it has not been mixed enough. Increase the speed to medium and mix for another minute or until it is thick and fluffy.

Divide the batter equally between the 2 prepared cake pans (or pour into the 13x9)
Place the pans on the center rack in the preheated oven. Bake them for about 35 to 40 minutes (or 45-55 min for the 9x13) or until the cake is almost ready to pull away from the side of the pan and a toothpick inserted into the center of the cake comes out with a few moist crumbs.

Cool the pans on a rack for 10 minutes, then invert them onto a wire rack that has been sprayed with cooking spray or lined with wax paper
Cool completely

Frost as desired (i used my buttercream frosting)

Choc Chip Coffee Cake w/Maple Glaze

follow the instructions for: Chocolate Chip Coffee Cake

in addition- for the
Maple Glaze:
1/2 cup confectioner's sugar
2 tblsp real maple syrup
couple drops of water
mix the sugar & maple syrup & add water to thin.
after the cake comes out- allow to cool & then drizzle with the glaze.

Ice Cream Cookie Sandwiches



Follow directions for Oatmeal Chocolate Chip Cookies

cool cookies completely & place 1 scoop of softened vanilla ice cream between 2 cookies. place back in the freezer to harden for about 30min-1 hour.

Roasted Red Pepper Manicotti

You Need:
1/2 box Barilla Manicotti
1/2 jar Barilla Baking Sauce(or homemade sauce)
1 egg
15 oz Ricotta Cheese
1 small jar Roasted Red Peppers (drained)
1 cup freshly grated Parmigiano Reggiano
1 cup shredded Mozzerella
salt, basil, pepper to taste





PREHEAT oven to 350°
COOK Manicotti for one minute less than package directions; drain and rinse in cool water. Cover; set aside.
PUREE: in food processor- puree the red peppers.
BEAT egg lightly in medium bowl. Stir in ricotta cheese, 3/4 cup mozzarella cheese, 3/4 cup Parmigiano cheese, red peppers, salt & pepper.



ADD basil to sauce
Spread ¾ cup sauce on bottom of 13x9-inch baking dish. Using a pastry bag, fill manicotti with cheese mixture; arrange in baking dish.
POUR remaining sauce over manicotti.
Sprinkle with remaining Parmigiano and mozzarella cheese. Cover with foil; bake for 35 to 40 minutes or until thoroughly heated

Tikka Masala

You Need:
1 box Archer Farms Tikka Masala (Target)
Naan Bread

this stuff is freaking awesome! but watch out- heartburn is unavoidable- at least for me!

quick crock pot chicken enchiladas

You Need:
1lb chicken breasts
1 package Taco Seasonings
1 cup water
1 package tortillas
toppings (cheese- etc)

put the chicken, taco mix & water in the crock pot on low for about 7 hours (until cooked & tender- shreddable)

shred the chicken

layer the chicken into the tortillas with cheese & toppings of your choice
